This edition of Brigadoon Weekend is Ramen.
The rich, salty, and steaming bowl of noodle soup, ramen has become an international symbol of the cultural prowess of Japanese cuisine. From humble fuel for the working poor to an international icon of Japanese culture, ramen is now a $44.1 billion global market.
Ramen isn’t originally from Japan at all. It’s from China, and how it made the jump is still up for debate.
But this is certain, the creation of a black market for American wheat imports during the US occupation of Japan, plus the reindustrialization of Japan’s labor force during the Cold War, as well as the elevation of working-class foods in redefining national identity during the past two decades of economic stagnation, all have contributed to the establishment of ramen as a national dish.
